Kettle | | Kettles, or mix cookers, are used for the cooking or heating of product. Kettles can be designed in many different sizes. Kettles can be designed with different types of heating jackets including steam, electric, and gas fired. Kettles can also be designed with different types of internal agitation or without agitation. Kettles can have swept surface or scrape surface agitation which removes product from the inner wall of the kettle by passing a brass or plastic scrape blade or paddle along the interior surface of the kettle. Kettles can also have agitation without swept surface paddles. Anchor or upside-down Christmas tree agitation for a kettle refers to an agitator type shaped like an anchor which passes near the interior surface of the kettle but which does not make contact with it. Kettles can also have other types of agitation including top or bridge mounted mixers, or homogenizers. Smaller kettles can be designed to tilt to empty the product from the kettle, while large kettles usually have a bottom discharge port. |
